GERGYOVDEN

Gergyovden [the Feast Day of St George] (6 May) is a springtime holiday, connected with St George, the patron saint of shepherds and flocks. On this day the houses and farm premises are decorated with greenery; wreathes are being made; folk ring dances are being performed, swigs are tied onto the trees and are swung. The feast table is laid out "onto the green" (near the village, close to a sanctuary or a monastery, next to the sheep folds) and a roast lamb, referred to as a St George's Day kourban sacrificial offering (this is usually the first male lamb born), a St George's Day loaf of bread and other ritual dishes are served.
